Are all paint removers the same or is one better for removing paint from metal? Which is best available in the US?

Over the many years, I think that every type and brand has been tried. The cheap hardware store brands, the high priced paint store brands and the expensive aviation "professional" types. I highly recommend: Klean Strip Sprayable Remover.
It come with a spray bottle, therefore easy and neat to apply. It is relatively fast and is "killed" with water. The residue is washed off with a hose. The best part...its inexpensive and available at Home Depot.

I use Jasco Premium Paint and Epoxy remover. It has worked for all I have had to do. Gel type, washes off with water. Really burns, however when you get it on your skin--wear gogles and gloves with it.
