Quiche Lorraine

Short C Pastry

  • 6 oz P Flour
  • 2½ oz butter
  • 1 egg yolk
  • Little water

Filling

  • 6 oz greated cheese
  • 2 beaten eggs
  • 6 oz chopped streaky bacon
  • ¼pt single cream
  • salt and pepper

Line 8" flan dish with pastry. Spread the bacon on top.

Beat together eggs, cream, cheese and seasonings.

Pour into flan case. Bake for 10 mins at Reg: 7. Reduce heat to Reg: 5. Bake for further 30-35 mins.

Serve hot or cold.

For variety mushrooms, sweetcorn, onions, tomatoes etc: could be added.
