Mum's Recipes

Cream and Leek Quiche

  • 7½ oz pkt frozen puff pastry.
  • " lbs leeks
  • 2 oz lean ham
  • ½ pint cream
  • 2 eggs
  • 2 oz butter
  • seasonings

Line 8" pieplate with pastry

Beat together the 2 egg yolks and the cream. Season and pour over the leeks.

Cook in a hot oven - Reg: 6 for 20 mins. Lower to Reg: 5 for 20 mins.
