Strawberry Cheesecake

for 6-8

  • 4 oz digestive biscuits
  • 2 oz marg
  • 8 oz cottage cheese
  • ¼ pint double cream
  • 2 oz caster sugar
  • grated rind of 1 small lemon

Topping

  • ¾ lb strawberries
  • 2 rounded tblsp caster sugar
  • 2 level teasp cornflour

Make biscuit crust base with crushed biscuits and marg. Line 9 " flan dish or ring, Chill, Sieve cheese, whip cream and stir into cheese. Add sugar and lemon rind. Mix well. Pour into flan case and chill.

Topping. Cut strawberries in half and arrange rounded side up over top of cheesecake. Put sugar and 4 tblsp water in a pan and bring slowly to boil. Blend cornflour with remaining water and stir into pan. Return to heat and cook till clear. Cool slightly and pour over strawberries. Chill.
