Gainsborough Tart

  • 6 oz. short-crust pastry
  • a little jam
  • ½ ounce butter
  • 1 egg
  • 2 oz castor sugar
  • 4 oz desiccated coconut
  • ¼ teaspoon baking powder

Line an eight-inch sandwich tin with the pastry. Spread with jam.

Melt butter. Stir in beaten egg, sugar, coconut and baking powder. Pour into pastry case.

Bake for about 30 minutes at 180 deg C
